Brew Number 78

  • Still Brewing's "Schultzheiss Lager"
  • Cooper's European Lager LME (340 * 1.7 / 23 = 25 IBUs)
  • Wyeast #2052 (Danish Lager) (1st generation)

Was brought out to 23L. Yeast pitched at 17.37 degrees (bed time). Used fermenter #2.

Apparently the yeast has an apparent attenuation of 74% If that is so the final gravity should be...
FG = (SG - 1000) * (1 - AA/100) + 1000 
   = ((1043 - 1000) * (1 - 75/100)) + 1000
   = 1010.8

Notes
  • Used ~750mL of starter pitched after wort has been chilled.
  • Boiled with the finishing hops for 4 minutes.
  • Fermented at 10deg in the fridge.
  • Used 160g of priming sugar.
  • Got 60 375mL stubbies from 23L of beer.
