Brew Number 120

• Twøbays Full Grain Blood Orange IPA (Gluten Free) (Brewfather version)

Ingredients

• 4.0kg Pale Millet Malt
• 1.2kg Pale Rice Malt
• 1.0kg Vienna Millet Malt
• 0.5kg Munich Millet Malt
• 400g honey
• Juice & zest of 1kg oranges (I didn't have blood oranges)
• 25g Centennial hops (8% AA)
• 50g Ella hops (13.3% AA)
• 50g Citra hops (13.5% AA)
• 50g Galaxy hops (14.3% AA)
• 2mL Beta-glucanase
• 4mL Alpha-amylase
• 2mL Glucoamylase
• 4g Yeast nutrient
• 5g Irish moss
• 2 x Mangrove Jacks M44 yeast packets
• Sachet of Mangrove Jacks Liquid Finings

Used Brewzilla for mashing.

Process

• Milled sorghum to ~1.00mm.
• Milled rice malt to ~1.27mm (both should have been smaller)
• Brought 20L of water to the boil.
• Added sorghum and rice malt.
• Stirred for 5 minutes.
• Added 2mL of each enzyme, pH was 4.88.
• Set to 60C for beta glucanase for ~1 hour.
• Raised to 80C for 90 minutes.
• Sparged with 11.75L water(!) over an hour.
• Showed some starch so I added 2mL more AA for an hour.
• Started boil with 24.8L wort (13% brix)
• Added juice and honey (14% brix)
• Set to boil.
• Added 25g Centennial (in a bag but it fell in so..)
• After 45 minute boil add irish moss and nutrient.
• Boil for 15 mins more.
• Volume seemed high so boiled for another 15 mins.
• Turn off heaters.
• Hop stand with 50g Citra and 25g Galaxy (should have been 25g of each though) for 20 minutes.
• Chill wort (chiller in ice bucket).
• Pump to fermenter (~27C) filtered through muslin bag.
• Pitch yeast.

Disage for beta glucanase was 0.1-0.25kg/ton and a density of 1.21g/mL. At the highest it is ~1.4mL. AA was very similar. Glucoamylase didn't say.

Ended up with 17L in Fermzilla.

Brew house efficiency calculated at 68.52% (18.1 ppg)

The yeast has an apparent attenuation of 81% If that is so the final gravity should be...

FG = (SG - 1000) * (1 - AA/100) + 1000 
   = ((1064 - 1000) * (1 - 88/100)) + 1000
   = 1007

• Yeast pitched at 25C.
• Temperature set at 20C.
• Used iSpindel3.
• Spunding valve set to 20 PSI (ale should have 2.3-2.6 volumes of CO2, used 2.0 to try and stop the iSpindel leaking).
